Holiday Weekend Detox!

Like most of you, I am recovering from a very food-filled holiday weekend!! Burgers, hotdogs, pizza, cake, cupcakes...even sushi!! Yes, you read correctly, there was sushi!! For the past 3 years, my sis-in-law has a 4th of July BBQ/Roll Your Own Sushi Party and then we watch the fireworks from her front lawn!

This weekend, my husband and I had no plans! It was really nice to just wake up with no plans and just enjoy ourselves. Saturday was a perfect beach day and then we had a nice dinner and ~~fell asleep early~~ stayed in to watch a movie.

After every holiday we always say the same thing, "This week we are not going to eat bad!!" And we are always good during the week but everytime we go home to visit our family there is always more food than expected. And why it seems like a good idea at the time, afterwards...not so much! Well again, we were good during the week and since we had no family plans we decided to continue our good eating habits. Which meant two recipes I have been dying to try out...

Being Italian we love pasta...and on Sundays that's what you eat. However, trying to "eat better", I came across a recipe from the "A Year of Slow Cooking" blog and have been dying to try the "No Noodle Lasagna". It was so simply and easy to make, if you have a crockpot you are already set. Since this is more of a baking blog I will just post the link to the recipe and let you try for yourself...I really want to get to the good part!!

Ok, so my husband and I also have a big sweet tooth...hence, this blog!

We wanted something sweet but he insisted I don't make any more cupcakes...so we decided on muffins. I looked in my cookbooks and found a nice simply recipe for "Raspberry Lemon Muffin", that were also low-fat! Perfect! Below is the recipe, simple and easy in both steps and ingredients.

Ingredients:
1/2 cup plain yogurt
3 tablespoons vegetable oil
1 tablespoon lemon juice
2 egg whites
1/2 teaspoon lemon extract (optional)
1 1/2 cups all-purpose flour
3/4 cup white sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon grated lemon zest
1 cup frozen raspberries
2 tablespoons white sugar for decoration (optional)

Put your oven on 400 degrees and make sure you grease your muffin pan, I used a 12 cup muffin pan but if you want large, fuller muffins you can use this recipe with a 6 cup muffin pan. In my kitchen aid I mixed the yogurt, vegetable oil, lemon juice, and egg whites. In a seperate bowl, I had my dry ingredients mixed together, flour, sugar, baking powder, salt and lemon zest. I then added the dry ingredients to the wet little by little until I had the correct batter which I put in the pans and cooked for about 15-17 mins. I opted out of the lemon extract and also with the additional sugar sprinkled on top.

All I can say is the muffins were YUM-O and a nice light snack in the morning. Our commute to the city is pretty early since we take the bus, so it's just enough to hold you until breakfast without over doing it. Definitely give these a try, you will not be disappointed! Each muffin is only 175 calories and 3.8 grams of fat, really how could you go wrong?! Until next time...

Happy Birthday America!!

Well this past weekend was America's big holiday and ~~an extra day off~~, time to spend with friends and family. There were bbq's, a highschool graduation and an excuse to bake up some treats!

I made red velvet cupcakes (my fav) with creamcheese icing...YUM!! I must say it was very hard to eat just one! The cupcakes, of course, were a big hit. I actually tried a new cake decorating item, the Punch. Cut. Decorate! Method...I must say I was very disappointed. I bought the Sugar sheets and the Star-shaped puncher, good thing the punchers were on sale because it definitely was not worth it. First off the Sugar sheet is very fragile and at $4 a sheet you want that baby to last!! Some of the stars broke after I punched them out and would often stick to the flat surface...let's just say you could get ~~the same~~ better results with fondant. Overall the Punch. Cut. Decorate! Method was not for me but give it a try and see what you think? You can find them on the Wilton.com website or at any A.C. Moore's or Micheal's craft stores.

Overall I had some very yummy and festive cupcakes for the bbq!

Happy 4th of July!

For the actual 4th, my husband and I went to Bushkill Falls for the day. We are not the most active couple but we could handle a couple trails.

We ~~were feeling brave and~~ decided to take the red trail which covered about 2 miles filled with beautiful scenary and smaller versions of the big Niagra Falls! For $11 you can go on your merry way...you can also purchase a map for $2 which includes a handy tree guide, facts and trivia, along with a punch card. It was very entertaining trying to spot the special punch areas along the trail. After our hike was finished we had some lunch and checked out the shops. Interested check out their website. What the Blog?!!

As I checked my email I came across my "blog" and noticed that there has been no action since February 2010!! I have been very ~~lazy~~ neglectful to what was suppose to be a promising blog that would help me unlease the inner baker in me. A lot has happened since February and I will recap quickly without boring you all...

On October 10, 2010, I married the love of my life!! It was a beautiful wedding filled with family and friends as well as purple flowers and LOTS of food!! It was such a beautiful day and, may I add, one of the best days of my life so far!!

We had our honeymoon at Secrets Punta Cana in the Domenican Republic, it was gorgeous...the people were so friendly that it was very hard to come home!!

Now that the honeymoon is semi-over and I am counting down to our 1st Anniversary, I promise to blog and bake a lot more!! Now that I am a wife I should be "Susie-Homemaker", it's not exactly like that at all. I'm very ~~spoiled~~ lucky to have a husband who does the cooking and every once in awhile I whip up a sweet treat!! I admit I have been ~~slacking~~ busy but I hope to start back up again. We had some 4th of July festivities and I got back into the swing of things by making some very yummy and patrotic cupcakes!!

That pretty much sums up my ~~1yr, 5 month hiatus~~ mysterious disappearance!!

My Interview w/ Bakerella!!

In my opinion, when it comes to baking Miss Bakerella takes the cake!! Being a baker myself and trying to come up with creative ideas so that a cupcake just isn't a cupcake, she gives you the inspiration to do something unconventional. I found her blog by accident and have been a fan ever since, trying out her recipes I was the hit of every party! If you aren't familiar with her blog she has the cutest ideas for any occasion but what she is most famous for are her cake pops. I got the chance recently to talk with her about baking, blogging and the Martha Stewart, to me it was such an honor!

KC: What got you started with baking?

B: I took a cake decorating class. It was just some basics on how to frost a cake properly, an introduction to fondant, and basically a lot of fun!

KC: How did the blogging start?

B: I wanted to submit some Halloween cupcake photos to Cupcakes Take The Cake's Photo Group on flickr.com. I was hoping they would choose one to display on their website. So I signed up for flickr, picked out a user name (bakerella) and added my photos. Then I was so excited I started a blog by the same username to keep up with my baking attempts and I haven't stopped. It's been almost two years and I love it.

KC: Where do you come up with such cute baking ideas? For example your cake pops!! Which I love!!

B: I make cake balls often and wanted to turn them into cake lollipops because everything's cuter on a stick you know. So basically, I just started experimenting. I still keep trying new things with them. I think I've made over fifty different designs so far.

KC: Wow! Do you have any formal training or have you taken any cake classes?

B: I wish. No formal training. Just two cake decorating classes. I definitely could use more. Especially when it comes to piping, and fondant, and even baking...I still have a lot to learn.

KC: Back in April you were on the Martha Stewart show. What was it like making your cake pops with THE Martha Stewart?

B: Scary. Well, I had never done anything like that before, so I was extremely nervous, jumping out of my skin nervous! Especially since it was taped live...no second takes. I'm really glad I did it though. It may have been one of the scariest things I've done, but it was also one of the most exciting.

KC: How were you "discovered"?

B: One of the producers for Martha Stewart heard about my cupcake pops and reached out to me through the website.

KC: Did she (Martha) give you any advice?

B: Yeah. Keep making them.

KC: Any goodies you cannot live without?

B: Brownies, Cookies, Cake, Cupcakes...and of course Cake Pops.

KC: Your name is Bakerella and I heard that there is a story to the origin of that name and Barbarella? Care to share the story?

B: Ha...It's not as exciting as it sounds.

KC: Do you have any tips or advice for new bakers out there?

B: Don't be afraid to try new things. You can do more than you think you can.

KC: Have you seen/read Julie & Julia? What did you think?

B: No and unfortunately no. But I can't wait to see the movie. I guess I'll have to Netflix it.

Baby Shower Cakes!!

So the baby shower cakes were a HUGE hit with the mom-to-be and everyone else @ the shower!! It was great to do something for my friend, however, I was a little nervous because it was a cake for an event that wasn't for my family. So making it perfect was my main concern and it got very stressed @ times!!

Hello Mr. Duck!! This was the top layer...her theme was ducks and frogs so I made three different cakes. Also, she wants to be surprised and doesn't know if it is a boy or girl. So I also made a pink cake and blue cake, they came out really cute! For the duck cake, I just did stars all over the cake...kind of time consuming but very cute and makes him look fluffy!! :)

I was very proud of the turn out and can once again pat myself on the back...I know, I know, I am my toughest critic!! Maybe one day I will be able to make something without being so hard on myself, what can I say...I am a perfectionist! Below are all three cakes on display...what do you think?!

Put it in the oven for Baby and Me!!

My next project, which I definitely will be on top of with the blogging, I will be making a baby shower cake for my girlfriend. She wants to be surprised so she doesn't know what she is having...her theme is frogs and ducks!!

I found a really cute picture of a cake that had ducks all over it and I thought I would improvise, so I'm doing 3 different layers. The bottom layer is a 12" cake that will be covered in blue fondant and have frogs around the border. The second layer is a 9" cake that will be covered in pink fondant and have a duck border...then the top part is going to be an actual duck cake!! I also found the perfect cake holder...it holds 3 cakes all different sizes which are the ones I mentioned and each on a different level. No layering or stacking necessary and each cake will be on display for all to see!! I'm SO excited but very nervous!! I really hope it comes out great...this is my first time making it for someone other than my family! Last night I already made 2 cakes and today I am making the big cake then covering the 9" cake in pink fondant today. Be back later with some updates and pictures!!

Designer Purse!!

You see these all the time on the cake shows...designer cakes...designer shoes...etc!!

So I thought, "Why not me?!! I could totally try to do that!!" I already mastered the Nintendo controller...so why not try this out! My cousin's 27th birthday was coming up in July and I thought I really want to make this perfect and not mess up. Because it was a purse cake there were a lot more steps than just making a sheet cake.

My first step was looking for inspiration...what kind of purse can I make that wouldn't look cheesy but wouldn't be too complicated for my first attempt. Again, I was watching Cake Boss and saw Buddy make a purse and shoe cake and I thought that looks simple!! Haha!! I then went online to check out his website...hoping for a good picture and this is what I found for my inspiration:

Making the First Cake

I really wanted this cake to be perfect for the party so I was going to my girlfriends house for a girls weekend and I thought why not bring this "practice cake" as a fun dessert for our girls themed weekend!! Below is my first attempt and it was a great hit at the girls weekend!!

My first Chanel cake...so as you can see there were several revisions I would need to make before July 25th. The handle is way too short and the quilt design was too faint, I was very nervous making those quilt like designs and thought I may cut the fondant and then ruin the cake. I later learned you can push a little harder without cutting the fondant and seeing the cake. Also, this cake doesn't have a purse flap it just has the border to make an illusion of a purse flap. Again tiny things that no one else would notice except me but not bad for my first try...I was very confident that the real cake would be a hit!!

Fast forward to the week before the party...I made the cake 2 days before which was a sheet cake size that I would then cut in half and stack to create that square purse shape. From watching all those cake shows they do a lot of cutting and shaving to create the perfect shape...I just cut the cake in half and was happy with the shape so I didn't really have to shave anything. The next day I put on the icing and covered it in pink fondant, made my quilt design and then added the purse flap, which I also made the quilt design to match the purse. Added the border and Chanel "C's"...then it was time to make the purse string! This was very tough because if you roll them too skinny they would break...took such a long time but I think my second cake "took the cake" and came out even better!! What do you think?!!

A little blurry but I thought it came out great!! You can see the quilt design and also the strap is longer and looks more realistic than the first strap which was WAY too short. I also added the little birthday tag which was just a little fondant tag I made and then icing on the "Happy Birthday Erica" and also made a little string out of black fondant...I probably could of just rested the tag on the strap and not connected it with the black string but I thought it was something cute to try instead of making an EXACT copy of Buddy's cake that I found. It was definitely fun to make...next purse would be a LV so well see!!!

So the designer purse experience was great!! I was very pleased with the outcome of both cakes and my cousin loved her birthday cake!! As Borat would say, "Great Success!!" Ha

Nintendo Cake

So I know again I haven't been up to date but I promise I will be on top of it more...I have an excuse I'm planning a wedding and working!! Plus, cake classes are on summer break...but I have been baking myself and practicing a lot!

My brothers birthday was in June and he is into video games and computers so I thought it would be cool to make him a Nintendo controller cake...like the old school Nintendo. I thought why not give it a try and practice with the fondant!! I just googled a picture of the controller and then did my own estimates:

Here was the first part...basically I just took a regular sheet cake and covered it in gray fondant. Then cut a black square and all the little controller pieces. Of course I was suppose to measure my pieces so that I could replicate this another time, but in the mist of being perfect and not messing up I forgot to write it all down...doesn't seem like it would be too hard to do again though. Ok, so that was part 1...I usually take about 3 days to create my cakes. Bake one day and then cool...next day would be to cover the cake and start designing...and then the 3rd day is final touches.

Part 2 was placing the final details on the cake...basically more buttons! Now I know what you're thinking...3 days until the party and you are making it that early?!! Well, I'm no Buddy so I can't do everything in one day...well I could but if that was my job...haha!! Actually the fondant does keep the cake very moist so the only way you would know it was made 3 days earlier is if you read this blog! And the fondant also stays soft too because of the icing in between...so nothing is ever hard where you could hurt your teeth.

Ta-Daaa!!! Here is the final touches to the Nintendo cake...I just used red icing and filled in the little details...like the arrows and the word "Nintendo" which is red on the actual controller. The only improv move was the "Happy Birthday Frankie" I thought that would look nice at the top of the cake instead of on the board...but really its whatever you like. It definitely was a big hit with everyone at the party and my brother LOVED it!!

As you can see he loved it!! We also had another cake just because the sheet cake was not big enough to feed everybody! It was very fun to try to make this and I feel for my first time "winging-it" I did pretty well. Usually when its something I am not preparing for it turns out great and when I need something done and I prepare there are usually mistakes but I feel I am definitely getting a lot better than I was when I first started!!

Oh it's been awhile...

Hi,

Sorry it has been so long and I kept putting off writing a new blog. A lot has happened since I was frantically making cupcakes and a birthday cake for my bf niece! Lets start from the beginning...

Elia's cake turned out cute and so did the cupcakes...I used the Magnolia Bakery cupcake recipe and I think hands down those are my favorite cupcakes!! All the kids loved the cupcakes and everyone loved the cake...Elia even said, "Kristin, you make a yummy cake!" Before she tried to cut a piece herself...too cute!! Below is the cake that I made for her birthday...what do you think?! (I couldn't find any cupcake pictures)

So I didn't have any more cake ideas...I did finish my cake classes at A.C. Moore, so, that was it for the cake baking for awhile. Well until May when I would start my classes in Philly with my grandma. Some exciting news...I got engaged in NYC on May 2nd!! Yes it was very exciting and very romantic...never saw it coming!! Until my next class which started near the end of May I still had to make a cake...which would be for the Engagement party! What I really liked and wanted to try was The Cupcake Cake...which is basically a small cake at the top and then a bunch of cupcakes on a holder where it looks like a big cake!! Cute idea and I figured why not give it a try.

Well let me tell you...the cupcakes were a lot easier than the cake!! I made my Magnolia Bakery cupcakes without any problems and then decorated them. Now a week before I made the marshmellow fondant which I'm not sure if I missed something in the recipe but the whole time I was using the fondant it was still sticky and never drying hard. This of course upset me...I have seen marshmellow fondant used before and it was hard and people were able to cut it and shape it to their cake easily. Well...not me and it was very discouraging!! Oh well...I still cut out little hearts for the cupcakes but after many tries I gave up on covering the cake in fondant and just had my grandma decorate it with icing. It was a big upset but I'm happy with how it turned out!! Below is a picture of the cake/cupcakes!!

I think it came out great!! The ring at the top is my fiance's mother's so we used that as our cake topper!! The cupcake tier I am very excited about...I got that @ A.C. Moore! I was going crazy trying to find the perfect cupcake holder and was out of luck...I went to A.C. Moore just to see and lucked out with this wonder find. Plus I had my 50% off coupon so it was even cheaper!! Now the cupcake tier is really just for cupcakes but I really wanted to have the cake at the top and cupcakes around it. So my dad came up with the idea to flip the top upside-down and tape it together...worked like a charm!! It was a hit...not to mention all the other yummy desserts!! :)

I think I am about caught up...I do have one more blog about the cake I made for my brother but other than that...I am pretty much up to date with what was going on in my cake life!! I promise to stay on top of it...ha!!

Stressed Out!!!

OMG!! I am just realizing now that I have A LOT of cakes to make for this weekend!!

26 Cupcakes...for Elia's (my bf niece) kids party

1 Giant Cupcake cake and a 9" round cake for Elia's family party

and...one 8" square cake for my cake class on Saturday!!! Oh boy...

Plus I have to work all day Saturday...aaahhhh!!! So between Thursday and Friday I am going to be a busy baker bee...ha!!

I am also trying a new recipe that I found online for the Magnolia Bakery cupcakes, their famous Vanilla Vanilla Cupcakes! They look SO yummy!!

Ok enough complaining...I gotta get to baking!! I will def post my progress...

Happy Easter!!

Hello Everyone!

Yesterday was my second cake class...only two more Saturdays to go for the month of April. The first class we just made some basic shapes and worked with the fondant. This week we had to bring in a 8in 2 layer cake that we would decorate with fondant and make some other cool designs. It was definitely fun!!

Today is Easter Sunday and this will be our cake that we will all enjoy...and I can finally enjoy too since Lent is over!!!What do you think? I know its not too Easter-y but our teacher just had us try different techniques and put them on our cake. I feel the purple is what brings out the Easter in this cake...ha! This did not take me too long (a little over an hr) only because our teacher wanted us on the same page so we had to wait for everyone to finish each step before we continued. Plus rolling out the fondant and measuring is really what takes up most of the time. We also started to make carnation bases...that was with gum paste. I am not really familiar with gum paste but according to the pictures in our books the carnations should turn out nice! I will post pics next week...we are learning to make carnations, daisies and a couple other flowers. I will keep you posted.

Also, I attempted Bakerella's Easter Egg Cake Pops...they did not turn out great my first time, but the family still enjoyed them! I put a little too much frosting when mixing up the cake balls so they were sticky and were not dipping into the chocolate correctly. Since Easter is over I will def try the cake pops again but this time I will try the ones that look like tiny cupcakes. I do not have any pics to post of my pops only because I was very upset with the outcome. Instead I am posting Bakerella's link in case anyone would like to try to make these themselves. Enjoy! April Assignment - Elia's Birthday

Happy April!!

The weather in Jersey is so crappy...hopefully it doesn't rain all month!

April doesn't just bring rain and May flowers...it's also Nick's (my bf) niece's birthday! She will be 3yrs old on April 28th and her mom asked me to make cupcakes for the kids party and a cake for the family party! I am very excited...I'll get more practice in and hopefully with some good ideas I can make something cute too!!

I have already done some searching and already found some really cute cupcake ideas. To the left you can see one cupcake idea that I think I can try to pull off (looks simple enough but well see)!! I found these on the flickr account for Cupcake Delight by Zalita!! A very awesome account...lots and lots of beautiful cupcakes!! There were so many ideas but the colors on this and the daintiness of the cupcakes looked perfect for a child's birthday party. Below I have attached a link to her site. For the actually cake, I was thinking of keeping with the cupcake theme and making a giant cupcake! While reading up on the giant cupcake serving size, it only feeds a whopping 12 people...that is not enough!! So I'm also thinking of putting the giant cupcake on an 8in round and coming up with something creative that will feed all of the guests! I found this giant cupcake cake on another flickr account, this time it was on Carri and Brian's account. She also had a lot of cute ideas, below is Carri's link. Check out her stuff...very nice (to the right you can see one of her cupcake cakes ideas). A note she made on this picture was that she did this while recovering from surgery and did all the decorating with her left hand...looks great!!

Also, this Saturday, April 4th, I will be attending my final course at A.C. Moore's, the Fondant & Gumpaste course 4, which will be every Saturday of this month!! I'm very excited...I have worked with fondant a little in my other courses but hopefully these classes will get me more familiar with the correct consistancy and more advance decorating than just covering a cake and putting a bow or flowers on it!

Hello!! So after reading many blogs and checking out other peoples cakes and cupcakes I was convinced by my bf to start my own blog. Now I'm nothing fancy, I started decorating cakes because I wanted to learn how to make cakes like my grandma! She made cakes ever since I was a little girl and I always would hear what a great job she did and how much everyone enjoyed them!

Besides learning from my grandma, I also started taking cake classes at A.C. Moore's because she thought I would learn tricks and up to date techniques that she never learned. Once I took my first cake course I was a little discouraged...crumbs on my icing...lop-sided cake...but my grandma kept encouraging me and telling me to practice. By my second course I was better at handling my bags, the icing didn't have as many crumbs as before, and I also started learning to work with fondant!! The cakes I made in that class were so pretty that I could not watch anyone cut into them. It was so sad that it took me so long to make it and it was gone in seconds!! Ha! I have taken three Wilton cake courses at A.C. Moore's and have my fourth and final course in the month of April. After this course I will have completed all the courses offered. Still eager to learn more I have already signed up for another cake decorating class in May. This is at Fante's in Philadelphia and I will be taking this class with my grandma!! I am very excited to take a cake class with my grandma...I just hope I can keep up with her!!

I am not familiar with all the cake and cupcake bloggers so please feel free to say Hi I would love to see other bakers blogs!! I am already a fan of Bakerella!! Her blog is great and she has so many cute ideas!! I can't wait to try some of her recipes!! I hope, with this blog, to learn as much as I can about different decorating ideas and also share my cake experiences!
